In this new season of my life with me only working part time, we’ve had to really adjust our food budget. No longer are the days I can go grocery shopping and just throw whatever I want into the grocery basket. I’ve had to really stop and budget and meal plan, but meal plan on a budget 🙂 I’ve figured out a little secret that makes meals go longer and is very budget friendly; add beans to your meals! Let me start off by saying I’ve never been a big bean person. If fact, growing up I was nick-named “No Beans” because as the bowl of beans was being passed around I’d shout “No beans!” I’ve just never thought they look appetizing. Over the years I’ve grown to like bean dip and beans in meals. I’ve somehow even managed to get both of my kids to love beans.
Lately, I’ve realized that adding beans to a meal is a best-kept secret to stretching a meal and living on a budget! Beans are high in protein so they fill you up, and they are extremely cheap! Most cans of beans are less than $1 and you can really save when they go on sale. There are so many different kinds of beans too. Try mixing and matching and adding some into your favorite meals.
